Carol was a favourite of my mother’s, looking after her incredibly well; she was wonderful to me and my wife and my children grew up not understanding why every restaurant didn’t treat us the way Parc did.  She is missed.  My deepest condolences to her family and circle.  She was an amazing leader.
My husband and I visited Parc regularly for all of our special occasions. The first time we’d went, Kathleen was our server and we’d instantly bonded with her. It was Kate who’d introduced us to Carol (Christian was the GM we’d initially met). I’m sure it will be no surprise, but Carol treated us like royalty and family. Any time she’d heard we were in the restaurant, something special made its way to our table. She helped me tell my husband we were pregnant by having them write it on his dessert plate. We’d planned it for a week, and it was Carol who delivered the plate to my husband. When I watch that video, what strikes me is the way his face lights up when he sees her come over. He’s more shy and not the one who generally makes friends in places like restaurants, but I can tell in that video how highly he thought of her. I thought it the first time I watched it back and in every subsequent viewing. She was able to light up his dark heart. Kate called to tell me of Carol’s passing because she knew how much I loved and respected her and she wanted to give me the opportunity to mourn her properly. I’m so sad as I write this, just picturing Carol’s smile or her holding that baby she helped me announce. She was a remarkable person who absolutely picked the perfect career for her personality and attributes. We will miss her dearly and will hold all of the memories she helped enhance as some of the greatest of our lives.

Everyone in heaven is having fun with Carolann, I know!  She was a joyful 4 year old, who could hear the pancakes hit the griddle a block away.  And she kept that great personality all her short life.  The family will miss her I know, but no one will ever. forget her.Rest in peace.
Carol was a bright light, taken too soon. May her strength, joy and love live on in the hearts of all who knew and loved her. Love and prayers, Terry,  Barbara and Chris.
