Penelope's obituary
Penelope Grace Simons left this world unexpectedly December 1st, 2023. Born in NYC February 26th, 1993 she is survived by her mother Cyndy McCrossen of Bosque Farms, brother C. Weston Simons and sister in law Rikki Carroll of Santa Fe, father Charles Simons of Albuquerque and countless cousins, friends and colleagues.
She attended Sandia Prep School, UNM and was a graduate of the Institute of Culinary Arts in NYC. She was an accomplished chef who cooked privately for movie stars and business icons. Her flavors brought people together. Her passion for food equity, support for farmers, belief in quality flavors and the ability of our diets to heal will inspire us all as we continue her legacy.
Her physical pain and ensuing journey down a tangled path of failed medical systems, prescription medications and street drugs robbed her of her life. Her flower was just beginning to unfold and her full life was still ahead.
We all miss her deeply and will look for her on the wings of birds, in the wind that surrounds us and in the eyes and cuddles of rescued animals she so loved. We will find her in the song of the moon and stars and in the comfort of beating hearts of those who love her still.

Do not let your friends or loved ones suffer alone. Being strong or courageous when you are suffering is overrated and know you do have support nearby. Believe in your hearts that all of our actions – no matter how small – can and will make a difference.
