Laurie's obituary

Born on October 5, 1961 and raised in Little Canada, Minnesota to parents Frank Skorczewski & Marie Dion Skorczewski, she was the youngest of four children.

Laurie had a love of learning and a rebellious streak from the start. She attended Little Canada Elementary and enjoyed spending time riding bikes; spending time with friends; and playing with her siblings Sue, Mark, and Greg.

After reluctantly completing high school in cigarette jeans and a leather jacket at Kellogg High, she was excited to start her career as a switchboard operator at the Minnesota state telephone office, which helped launch her career at NCR Comten. While working at NCR she met many life-long friends and her first husband, Brian. She and Brian married on May 3, 1986. Together they had many adventures (skydiving!), traveled, and had three children, Trevor (1987), Mercedes (Sadie, 1989) and Jordan (1990).

While raising a family in Blaine, Laurie went on to pursue a variety of careers and passions. Her love of learning led her to work in website design, personal training, reality, nursing, and ultimately culinary arts. After graduating culinary school, Laurie started a catering company - Thyme for Lunch. Laurie went on to share her passion for feeding others at Kinderberry Hill, Concordia Language Village, The Yacht Club, and Little Canada Elementary.

Laurie was always grateful for her amazing partners during different phases of her life, including Stephen Lynch who helped her remodel a treasured townhome in White Bear Lake. Steve passed in 2019 after a decade of camping, cooking, and joy together.

In 2020 Laurie and Steve began a romance that would take them across the country, visiting 50 National Parks in 5 years. They married on April 3, 2021 in their beautiful backyard among their adoring family and friends. Together they built a life and remodeled their forever home filled with joy and laughter.

Laurie passed peacefully after a brief and heroic battle with esophageal cancer. During her final weeks she received wonderful care from the dedicated staff at Regions Hospital. Her family is deeply grateful for her care.

She will be so deeply missed by her loving family, friends and colleagues. Laurie is preceded in death by her parents Frank Skorczewski & Marie (Dion, Skorczewski) Smith, stepfather George Smith, sister Susan Carrigan & brother Mark Skorczewski.

Laurie is survived by her husband Steve, brother Greg (Laurie), son Trevor, daughter Sadie (Nora), daughter Jordan (Ben) & beloved granddaughter Bertie; as well as stepdaughter Molly & step-grandchildren Veda, Mila & Shirley, and stepson Dan.

A Celebration of Life will be held on the winter solstice, December 21st from 1-4 pm at the Como Lakeside Pavillion, 1360 Lexington Parkway North, St. Paul.

In lieu of flowers, please direct memorials to the National Parks Foundation, Planned Parenthood or the League of Women Voters; and spend some time enjoying new foods, loved ones, and sunshine.
