Background
As many of you know, Mary suffered from the autoimmune disorder, Celiac Disease. This is a genetic condition that causes an immune reaction to eating gluten, a protein found in wheat, barley, and rye. Over time, the immune reaction to eating gluten creates inflammation that damages the small intestine's lining, leading to medical complications. Celiac disease can be difficult to diagnose and often goes undiagnosed, as we suspect it did with Mary for many years. There is no cure for celiac disease; currently the only way to manage the condition is to adopt a gluten-free diet.
